Processing Colombian Coffee

The Wet Mill:
On the farm we
process
the ripe coffee cherry
the same day it is picked.
The process involves
separation depulping,....
...fermentation...
...and washing.
Then the
coffee is sun dried
in its protective parchment
"pergamino"...
...on sliding drying tables.
These tables can be
drawn in at night...
...and during rainfall to protect
the beans from moisture.
Coffee is dried down to a
12% moisture content.
